Baked Doughnuts

To mark the start of National Doughnut Week (Saturday 9 –16 May)  we’re sharing an easy recipe for baked, glazed doughnuts that you and the kids can do together.

We like any excuse for doughnuts and the fact that they’re baked – not fried – means they are a little bit healthier than their normal counterparts.

Encourage the kids to get creative with their glazing and decorating to make a truly unique bake, just for them!

 

Ingredients:

Doughnuts

  • 1/2 teaspoon vanilla extract
  • 240g of cake flour, sifted
  • 150g of granulated sugar
  • 2 teaspoons of baking powder
  • 1/4 teaspoon of ground nutmeg
  • 180ml of milk
  • 2 eggs, lightly beaten
  • 2 tablespoons butter, melted
  • Non-stick vegetable oil spray

 

Icing

  • 125g of Icing Sugar
  • 2 tablespoons milk

 

Method:

For the doughnuts:

Preheat oven to 160°C then spray the doughnut pan with cooking oil.
In large bowl, sift together flour, sugar, baking powder, nutmeg and salt.
Add the milk, eggs and butter in a bowl and beat until combined.
Next, fill each doughnut segment in the pan to 2/3 full.
Put into the oven and bake for 7-9 minutes or until the tops of the doughnuts spring back when touched.
Let the doughnuts cool in the pan for five minutes before removing them.
Allow them to cool completely before decorating.

For a vanilla glaze:

Stir together sugar, milk and vanilla extract until the mixture reaches the right consistency.
If it’s too runny, add more sugar. If it’s too thick, add more milk.
Add to doughnuts along with any other toppings you fancy!
