Tuna Balls and Pasta

It’s World Tuna Day so why not celebrate it with this simple and delicious recipe for the whole family.

 

Ingredients:

Large can of tuna in oil

80g of breadcrumbs

45g of grated cheddar cheese

1 large egg, beaten

2 tbsp of olive oil

Pasta shapes of your choice

1 small can of sweetcorn

Handful of frozen peas

 

Method:

  • Put the tuna and its oil into a large bowl and mix in the breadcrumbs and grated cheese. Add the beaten egg and then season with a pinch of salt and stir again until everything is well mixed.
  • Using your hands, roll the mixture into twelve small balls, then chill until you’re ready to cook.
  • Cook the pasta according to packet instructions and add the peas for the last couple of minutes. While the pasta is cooking, heat the oil in a non-stick frying pan over a medium heat and fry the balls for ten minutes, until they’re golden brown. Remove from the pan and pat dry any remaining moisture with kitchen paper and keep warm.
  • Drain the pasta, return to the pan and add the corn. Heat gently for a minute and stir continuously, until heated through. Serve up on a plate with the tuna balls and dig in!
