Sheet Pancakes

Pancake Tuesday is tomorrow (21 February) and we wanted to share this play on the average pancake. If you’re pressed for time and can’t manage to make individual pancakes for the whole family then try this Sheet Pancake recipe. Our editor, Elizabeth, recently made a chocolate chip version and can confirm they were a huge hit with the kids!

Ingredients

1 tbsp melted, unsalted butter (extra to grease the tray)

200g self-raising flour

1 tsp baking powder

1 egg

250ml milk

2 tbsp golden caster sugar

Toppings of choice!

 

Method:

  • Heat oven to 180C/160C fan/gas 4. Brush a 25 x 20 x 2cm baking tray with butter. Tip the flour and baking powder into abowl and mix in the egg, milk, butter and caster sugar.
  • Scrape the mixture into the tin and level the surface. Dot the blueberries and chocolate chips (or whatever filling you fancy) over the top and bake for 20 mins or until the middle of the pancake feels cooked through when pressed lightly.
